It has unique characteristics thanks to the local microclimate and soil structure of the estate and is harvested in mid-October. This Greek olive oil extra virgin has a medium to high fruitiness with enhanced notes of fresh green olives and green banana, artichoke and freshly cut grass. Greek olive oil extra virgin is extracted within 4-8 hours of harvesting and cold pressed under optimum conditions.
