What ingredients do I need to make this Greek Court?

  • 1 kilogram of potatoes
  • 2 lemons
  • 1.5 liters of cold water
  • 1-2 tablespoons of fresh thyme
  • 2 cloves of garlic
  • 70 grams Extra Virgin Olive Oil
  • 30 gr of fine semolina
  • Salt
  • Pepper
  • 1 teaspoon sweet paprika powder

The preparation of these Greek Crispy Fried Potatoes with Thyme

Preheat the oven to 200 degrees.

Take 4 large potatoes and cut them all into 4 to 6 pieces. Scratch all the potato pieces several times on all sides, so that the potato absorbs the herbs better and becomes extra crispy. Put the pieces in a pan.

Now take the two lemons and cut them in half. Squeeze them over the potatoes and add the rest of the lemon. Salt and pepper them and pour the cold water over them.

The pan can now be put on the fire and when the water boils, set the timer to 10 minutes. Do not let it boil longer than 10 minutes. Then you must drain the potatoes immediately, otherwise the potatoes will absorb too much water and we don't want that!

Set the drained potatoes aside to steam for 2-3 minutes.

How do you season these Greek Crispy Fried Potatoes with Thyme?

While they are still hot, put the potatoes in a large bowl. Sprinkle salt and pepper over them again, pour the Extra Virgin Olive Oil over them. Now crush the two garlic cloves and add them, and the paprika herbs go in as well, the thyme finishes it off.

To make the potatoes extra crispy, semolina (pasta flour) is poured over them.

How to bake the Greek Court in the oven?

Now place the baking tray in the oven without anything on top of it, to allow it to become hot. While you wait, shake the potato mixture well. After about 5 minutes, the baking tray will be hot and you can take it out. It is important that you do this as quickly as possible.

Take the tray out, put the mix on top and quickly put it back in the oven. It takes 40 minutes before they are ready. Turn the potatoes every 10 minutes to help them crisp up.
