- 2 chickens, breast fillets
- 200 g brine
- Souvlaki pita bread
- Spring onion, finely chopped
- tomato, finely chopped
- lettuce, finely chopped
- olive oil
For the brine(2 chicken breast fillets)
- 550 ml of water
- 1/2 lemon, cut into two
- 3 bay leaves
- 1/2 bunch of parsley
- 1/2 tablespoon (s) thyme, dry
- 1 tablespoon (s) honey
- 35 g coarse salt
- 2 clove (s) garlic, with peel, crushed
- 1 tablespoon (s) peppercorns
For the sauce
- 4 tablespoon (s) sifted yogurt
- 1 tablespoon (s) mustard
- 1 tablespoon (s) honey
- Lime zest, from 1 lime (optional)
- 1 tablespoon (s) lime juice, from 1 lime
How do I make the brine for this Greek dish?
First, make the brine for the Greek Chicken Souvlaki. Put the water in a pan. Add the salt, bay leaves, thyme, peppercorns, parsley, garlic, half a lemon and one tablespoon of honey. Place the pan on the fire and when it is boiling put the pan aside to give the contents an hour to soak for a perfect brine.
After an hour, strain the brine through a sieve and it is ready to use for this tasty Greek dish.
How do I prepare the chicken cubes?
Preheat the oven to 180 degrees.
Cut the chicken for the Greek Chicken Souvlaki into cubes, one chicken breast fillet into about 8 - 10 pieces. Then put the chicken in the brine to soak up the flavours. Give the chicken at least half an hour to a maximum of 45 minutes to absorb all the flavours. When this time is up, you can prepare the pita breads.
Then put a grill pan or frying pan on the fire, remove the chicken cubes from the brine and drain them. If necessary, pat them dry with a kitchen towel. Slide the chicken cubes onto the skewers. Sprinkle the chicken with olive oil and put it in the pan. While they are cooking, you can prepare the bread rolls for this Greek Chicken Souvlaki.
How to make the Souvlaki pita bread
Place the Souvlaki pita buns on a baking tray and sprinkle with olive oil, pepper, salt and oregano. Put the baking tray in the oven for 3 to 4 minutes. Are you keeping an eye on the chicken sticks?
Make the sauce to serve with the Greek Chicken Souvlaki
Take a bowl with the Greek yoghurt, add the honey and the mustard. Mix well and grate some lime peel over it and squeeze a little lime juice into the sauce. Stir this up and the sauce is ready for the Greek Chicken Souvlaki. Take the pita buns out of the oven. The chicken will now be just about ready.
Serve this Greek Chicken Souvlaki with lettuce and tomato, among other things
Lay a piece of aluminium foil with baking paper on top. Place the buns on this and sprinkle with sauce. Now top it with lettuce, tomato, onion, parsley, the green of a spring onion and finally the olive oil. Then put the Greek Chicken Souvlaki on top. Roll up the packet well and squeeze it firmly, you can now pull out the skewer. Do this for all of them and serve the whole on a nice Olive wood serving board.
