How do I fry the prawns for this Greek Shrimp Saganaki
Put a frying pan on the fire and let it get very hot. The prawns you are going to use no longer have a skin, but the tail and the head are still on. Sprinkle three tablespoons of Extra Virgin Olive Oil over the prawns and add salt and pepper.
Tip: To keep the prawns nice and juicy, it is important to add the Extra Virgin Olive Oil, salt and pepper shortly before frying.
When the frying pan is hot, you can put the prawns in. Fry these for a total of 1 minute, to let them caramelise for a little while before they go into the oven. The actual cooking of the prawns takes place in the oven. After a minute, put the prawns on a plate and set them aside.
Frying the vegetables and preparing the oven dish
Now put a dash of olive oil in the same frying pan. Fry the onion, pepper, garlic, salt, pepper, chilli pepper and star anise in it. When it is golden brown, add the tomato puree and stir. Add the Ouzo and flame.
After flaming, add the tomato mix, stir until it boils and then pour it directly into an oven dish.
Chop the basil and sprinkle half of it over the dish. You can now add a little fresh oregano. Crumble 100 g feta cheese over the oven dish.
The prawns can be placed neatly on top, push them a little into the sauce so that they can cook in it. The rest of the feta cheese can be crumbled over the top, the other half of the basil and oregano sprinkled on top and finished off with a dash of Extra Virgin Olive Oil.
